Switching out sand with a goby

I'm thinking they will go crazy with rearranging stuff, but I want to switch out my white sand with Tahitian black sand. The only problem is that I have a YWg and pistol pair living in it. If I do maybe 1/8 or a 1/5 of the sand switch a week, right before a water change, would that be okay?

Or catch the two, switch out the sand, and put them back.

 

Theoretically there's no reason why anything would change, other than the consistency and their home.

I won't be able to get them. The pistol hardly ever comes out and decided to make its home under the one rock that almost every other rock is laying into of. I think the hardest thing will be either keeping trates down if I do it all at once, or keeping the black sand from mixing with the white if I do it little by little.
