Does Carbon dosing remove odors like Activated Carbon?

I used the Red Sea Reef Mature kit to cycle my tank and have been quite pleased with it. I've got a ton of Nopox left over so I've been using that for my carbon dosing. Now I'm debating between switching to vinegar, or granular activated carbon, or possibly both. The clincher for me is which does a better job at odor reduction. Does carbon dosing even do anything for the odor? I've only ever dosed Nopox. I know a lot of people suggest activated carbon for this task, but I'm wondering if carbon is carbon and I'll get the same benefit from an appropriate amount of vinegar. Follow-up question: How do I get rid of the smell of vinegar?
