sometimes when I'm looking at a frag (online), the center is very bright, but towards the edge it's gray or white.  Is this the coral dying or growing?  I'm new to it, so I don't know what a healthy one looks like.

From what I understand, it is good to have that white trim around the edges. It shows it's alive and growing...but you might want to confirm that

White around the edge is growth.  Gray in plating montis is normally a sign of some type of deficient trace element.  Usually potassium.
